As some of you know, I have made homemade noodles in the past.....using the flat pasta/noodle maker that rolls out the dough to the desired thinness, then using another attachment to cut the desired width of noodle. This time I tried another of the attachments for the Kitchen Aide Mixer that Don had bought me......the spaghetti extruder!
It uses the same dough as the noodle maker, although I did have to add more flour to it as I worked with the dough. It was a matter of trial and error until I got to a consistency with the dough that came out of the extruder and wasn't too stuck together. I don't think one is able to make spaghetti that is dryer and not stick, since it is in the directions that one has to pull apart the spaghetti strands afterwards. This pasta making process is a bit longer, but once again, TOTALLY worth the time and effort involved!
Don and I are trying to cut our cholesterol numbers back (eating less saturated fats), so I made the dough without using egg yolks, and only with egg whites. Homemade pasta truly is delicious and quite different from dried store bought pasta, which I would now say is "rubbery" after cooking. I also made Italian sauce from scratch for our dinner, but that was after discovering I didn't have any store bought sauce in a jar when I went to the cabinet ..........thankfully I had a can of tomato paste for the base! Believe me....the sauce was made in record time since the spaghetti was already prepared and ready for the table! ;)
For those of you who have the ability to make homemade pasta, please, please, please try it! You and your family will be glad you did. ;)

What you did is perfect for somebody who is trying to cut cholesterol numbers back! Using eggs white is much healthier, where did you learn that? I learnt it in Argentina, when I was in my Apartment for rent Buenos Aires I had a lot of free time to cook and that is what I used to prepare: Pasta! So tasty!
Now I call myself a cook, even if the only thing I learnt was how to make homemade pasta! LOL
